Guacamole
Guacamole

Authentic Mexican guacamole made with perfectly ripe avocados, fresh lime juice, cilantro, onion, and a kick of serrano chile. Chunky, bright, and unfussy — this is the real thing, not the smooth, overworked paste you'll find in plastic tubs.
Ingredients
- 3 pieces ripe Hass avocados
- 2 tbsp lime juice
- 0.25 cup white onion, finely diced
- 1 piece serrano chile, minced
- 3 tbsp fresh cilantro, chopped
- 1 piece Roma tomato, seeded and diced
- 0.5 tsp salt
Instructions
- 1
Cut avocados in half, remove pits, and scoop flesh into a bowl.
- 2
Add lime juice and salt. Mash with a fork to your desired texture — it should be chunky, not smooth.
- 3
Fold in diced onion, minced serrano chile, cilantro, and diced tomato. Stir gently to combine without over-mashing.
- 4
Taste and adjust salt and lime juice as needed.
- 5
Serve immediately with tortilla chips, or alongside tacos, quesadillas, or any Mexican dish.
Chef's Tips
The key to great guacamole is perfectly ripe avocados — they should yield to gentle pressure but not feel mushy. Make it right before serving; guacamole doesn't hold well. If you must store it, press plastic wrap directly onto the surface to prevent browning.
