Flavor profile: Neutral flavor with a faint sweet, grassy corn aroma that subtly infuses into steamed tamales.

    What Are Dried Corn Husks?

Dried corn husks are the outer covering of ears of corn, dried and sold in bundles specifically for making tamales. They're soaked in warm water until pliable, then used to wrap the masa and filling before steaming. They impart a subtle, sweet corn fragrance to tamales and are traditional in most of Mexico (as opposed to banana leaves, which are used in southern Mexico and the Yucatán).

    Where to Find It

Available in bags in the Hispanic foods aisle of most US grocery stores, especially around the holidays. Latin markets carry them year-round. A single bag (usually 8 oz) is enough for about 2–3 dozen tamales and costs $2–4.

    Banana leaves

Adds a distinct tropical, slightly grassy flavor — different from corn husks but equally traditional in Mexican cooking

Banana leaves are used for tamales in Oaxaca and the Yucatán. They're available frozen in Asian and Latin markets. Soften over a flame or in the microwave before using.

    Parchment paper

No flavor contribution at all, but fully functional for steaming

Parchment paper works perfectly for steaming tamales — the masa will cook just fine. You lose the romantic presentation and subtle flavor, but it's completely practical.

    Fresh corn husks (in season)

Slightly sweeter, more moist corn flavor — actually preferred by some cooks

If it's corn season, peel husks from fresh ears, use immediately without soaking. They're more pliable and aromatic than dried husks.

    Aluminum foil (last resort)

No flavor at all and retains more moisture, making tamales slightly wetter

Works in an absolute pinch but isn't recommended for regular use. Tamales won't brown or develop the same texture.
