Flavor profile: Subtle anise-like, slightly nutty flavor that infuses into beans, moles, and barbacoa when toasted.

    What Are Avocado Leaves?

Avocado leaves from the Mexican criollo avocado tree are used as an herb in Oaxacan and southern Mexican cooking. When toasted, they release a subtle anise-like aroma that flavors beans, moles, tamales, and barbacoa. They're used similarly to bay leaves — added during cooking and sometimes removed before serving. The flavor is delicate but distinctive, adding an aromatic depth that's hard to replicate. Avocado leaves and epazote are both used to season beans, and either can stand in when the other isn't on hand.

    Where to Find It

One of the hardest Mexican ingredients to find in the US. Occasionally available at Latin markets, especially those catering to Oaxacan communities. Available dried online from specialty spice retailers. Important: only use leaves from Mexican criollo avocado trees — leaves from Guatemalan or Hass avocados may contain toxins.

    #1 Best Match
½ tsp crushed anise seeds per 2–3 leaves

    Toasted anise seeds (small amount)

Captures the anise quality but is more intense and one-dimensional — use sparingly

Toast anise seeds in a dry skillet for 30 seconds, then crush lightly. Add to the dish where you would add the leaves. Start with less than you think.

    #2
1 bay leaf + small pinch dried tarragon per 2–3 avocado leaves

    Bay leaf + tarragon

The bay leaf adds aromatic depth while tarragon contributes a hint of anise, but the combination is more herbal than the original

A reasonable approximation that uses commonly available herbs. Remove the bay leaf before serving.

    #3
1 tbsp chopped fronds per 2–3 leaves

    Fennel fronds

Adds a light anise note with a fresh, green quality — different but complementary

Fresh fennel fronds (the feathery tops) are available in most grocery stores. They add a pleasant anise quality to beans and stews.

    #4
    N/A

    Just omit them

The dish will be missing a subtle layer of flavor but will still taste great

Avocado leaves contribute a subtle background note. Most people outside of Oaxaca won't miss them, and the dish will still be authentic and delicious.
